Vicki is Senior Lecturer at the Rosen College of Hospitality Management at the University of Central Florida, as well as the Assistant Department Chair for the Hospitality Services Department. Vicki teaches and mentors 500 students a year in Human Resources, Communications, and Strategic Management & Leadership Capstone course. Leadership and Communications are designated as High Impact Practices Integrative Learning Experience courses; the Capstone course is certified as a Quality Blended Course.

Vicki holds a doctorate degree in Curriculum & Instruction from the College for Community Innovation and Education at UCF plus a Master’s degrees in Human Resources and an MBA from Rollins College. Vicki is certified as a Senior Professional in Human Resources and a Six Sigma Green Belt; certified as a Myers-Briggs Type Indicator and DDI (Development Dimensions International, Inc.) facilitator; also a Listening Leader and Quality Management Facilitator. Vicki is a Certified Hospitality Trainer, Certified Hospitality Supervisor, with a Certification in Hotel Industry Analytics.

In August 2021, Vicki was selected as Rosen College Faculty Member of the Year. In 2015 and in 2020, Vicki was honored with the UCF Teaching award; in 2013 Vicki was awarded the Excellence in Undergraduate Teaching Award. In December 2018, Vicki was invited to present to both faculty and students at Eurasia University In Xian, China.

Vicki presented her research at MTCON (Managing Tourism Across Continents Conference 23) in Istanbul, Türkiye in March 2023. Vicki also presented at the 8th International Self-Determination Conference in June 2023. In February 2025, Vicki presented at SECSA (10th Annual SECSA {Southeast, Central and South American, and Caribbean [SECSA-CHRIE] Federation} CHRIE Conference – Celebrating A Decade of Southern Hospitality). Vicki has also been invited to present in Fukuoka Japan in May 2025 at the Global Hospitality and Tourism Research Summit.

Vicki’s professional hospitality career includes five years in Human Resources with the Walt Disney Company where she was recognized as a Partner in Excellence, the highest Cast Members award. For over six years, Vicki was Director of Leadership and Training at Gaylord University at the Gaylord Palms Resort and Convention Center.

Previously Vicki was Director of Human Resources for the Charles Schwab for the Eastern United States Brokerages Operations Groups; previously Vicki led Team Implementation for the first Customer Service Center at Tupperware Worldwide Headquarters, after a decade as a regional property manager for management companies based in the US and Canada. Vicki inspires lifelong learning for her students.
