Dr. Peder Hagglund joined the Rosen College of Hospitality Management in 2004. His research interest include food service operations, process analysis, and sustainability & information fluency.
Dr. Hagglund has many years of experience managing food service operations in 1,000+ rooms at 3 and 4 star hotels as well as small and large hospitals.
He received his PhD. in Hospitality Education and M.S. in Industrial Engineering from the University of Central Florida, and his B.S. in Restaurant Administration from Endicott College. He also received a Diploma from the Les Roches International School of Hotel Management in Switzerland.
